The quiet campo (countryside) in the hills above Granada, Andalucia, suddenly spring to life at the end of December. Christmas and the festive season takes second place for most, as harvesting the olives becomes the priority, almost a way of life, as it is the main industry and therefore main source of income. There are all manner of tractors, tree shakers and contraptions to make the harvesting slightly less labour intensive to collect the millions of olives.
Some without the modern technology and with smaller groves still harvest by hand, it’s as simple as putting the huge nets down and beating/ shaking the tree! A back-breaking sort out, then off to the local co-operative where the olives will be processed into an exceptional product.
